Spice Cranberry Oatmeal Cookies Provide A Healthy Vegetarian Cookie Treat

It is no secret that healthy eating in an important part of any healthy lifestyle. However, while healthy eating is a goal in many people’s lives, the inevitable sweet tooth often rears it unhealthy head, demanding to be fed something sweet. This healthy vegan recipe is very tasty, a thick and chewy oatmeal cookie just like mom used to make and is the perfect solution to a nagging sweet tooth.

This healthy vegan oatmeal cookie recipe requires the following ingredients:

¾ cup margarine

1/3-cup sugar

¾ cup brown sugar

1-teaspoon vanilla

½ cup soy milk

1-cup flour

½ teaspoon baking soda

¼ teaspoon ginger powder

¼ teaspoon cloves

½ teaspoon cinnamon

1/4/-teaspoon nutmeg

3 cups quick cooking rolled oats

1 cup dried cranberries

Once all of the ingredients are gathered together, preheat the oven to 350 degrees.

Using an electric mixer, cream together the margarine and sugars in a large bowl, until smooth. Add vanilla and soy milk, mix well.

In another bowl, combine the flour, baking soda and spices. Mix until well blended. Add the dry mixture to liquid combination slowly, allowing each addition to blend thoroughly before adding more of the dry mixture. When the two mixtures have been completely combined, make sure to blend well.

Remove mixture from electric mixer. Stir in the oats and cranberries by hand, making sure that the mixture is well combined.

Line a cookie baking sheet with parchment paper. Drop 1-½ inch balls onto the parchment paper. Bake for 10-15 minutes. This cookie stores well in an airtight container.
