Pumpkin Chocolate Chip Cookies: A Popular Harvest Snack

As the summer air turns brisk with autumns chill, pumpkin desserts become more popular. It is the season of pumpkin bread, pumpkin pie and pumpkin chocolate chip cookies. This recipe is a very popular choice for Halloween parties, autumn brunches and other country potluck events.

This recipe is done in two phases and it is best to follow the directions exactly to insure that you get the highest quality chocolate chip cookies. It is best to gather all of your cookie ingredients and baking supplies together in one space prior to beginning.

Pre-heat the oven to 350 degrees Fahrenheit.

The simple recipe includes the following ingredients:

4 cups flour

2 teaspoons baking powder

2 teaspoons cinnamon

1 teaspoon allspice

2 teaspoons nutmeg

1 teaspoon salt

1 pound of margarine

2 eggs, beaten

2 cups sugar

2 tablespoons vanilla

16 oz. can of pumpkin

2 cups chocolate chips

Combine all of the dry ingredients into a medium-sized bowl. Making sure that there is enough room to add all of the ingredients and combine them in a well-mixed fashion.

The second step requires that you combine the liquid or soft textured ingredients. Cream the margarine and sugar together. Add the eggs, vanilla and pumpkin and continue to stir until well combined. Slowly add the dry ingredients to the liquid mixture. The final step is to stir in the chocolate chips. Mix well.

Drop chocolate chip cookies by spoonful onto an ungreased or parchment covered cookie sheet. Bake for 15 minutes. Allow cookies to cool momentarily on the cookie sheet and then transfer onto cooling racks.

Once cool, frost the cookies with chocolate cream cheese frosting.

Chocolate Cream Cheese Frosting

3 squares semi-sweet chocolate

1 ½ tablespoons water

3 oz. package of cream cheese, softened

½ teaspoon vanilla

1 ¼ cup confectioner's sugar

This frosting is quick and easy to make. Place chocolate chip squares and water in a microwave safe bowl. Microwave for one-minute intervals at medium heat; stir chocolate at the end of each minute, until smooth and creamy. Stir and cool to a lukewarm temperature and mix in the cream cheese and vanilla. This is best done with an electric mixer. Then, beat in the confectioner's sugar until frosting is smooth. This recipe will make 1 ¼ cups of frosting.
